The Mexico Mountain Water process, is an indirect way of decaffeinating coffee beans without the use of harmful chemicals. To put it simply; caffeine is extracted from the raw beans using a fresh water 'washing process'. Once this is complete, essential oils and flavours are reintroduced to the green coffee before it goes to roast
